French Fennel Apple Tart with Plum Jam

Serves 12

3  apples - crisp & tart varieties like pink lady or granny smith, peeled and thinly sliced

1 bulb fennel, thinly sliced

1 sheet frozen puff pastry, slightly thawed

1 stick salted butter, diced

½ teaspoon fennel seeds, toasted & ground

½ cup cup cup sugar

½ cup cup girl meets dirt plum jam

3 tablespoons water

On a floured work surface, roll out puff pastry to even the shape. Place on a sheet pan lined with parchment paper. Arrange sliced apple and fennel on the pastry. Sprinkle with all of the sugar, dot with butter, and bake at 400F for 40 minutes. Some of the sugar will caramelize and burn while baking, that’s ok! The patty will be deeply brown around the edges with some slight roasting and charring of the fruit when finished.

While baking, heat jam, fennel seed, and water over medium heat until bubbly. Let cool slightly. 

Brush pastry with the jam sauce and serve warm.
