Oat Blondie Base

  • ½ cup (113 g) unsalted vegan butter

  • ¾ cup (120g) light brown sugar

  • ⅔ cup (165g) unsweetened applesauce

  • 1 tablespoon (7g) ground flax seeds

  • 1 cup (134g) all purpose flour

  • ⅔ cup (68g) oat flour

  • ½ teaspoon baking powder

  • 1 teaspoon salt

  • ½ cup (24g) unsweetened shredded coconut

  • ¼ cup (32g) rolled oats

  • ½ cup (90g) Enjoy Life vegan white chocolate chips

Lime Frosting

  • 1 stick (113g) unsalted vegan butter, at room temperature

  • 2 cups + 2 tablespoons powdered sugar

  • Zest and juice of 1 lime

Instructions

Step 1

Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper.

Step 2

In a microwave-safe bowl, combine the butter and sugar. Heat in 30-second increments, stirring each time, until melted and smooth.

Add the applesauce and flax seeds. Mix well and let cool slightly.

Step 3

In a separate bowl, combine the all purpose flour, oat flour, salt, baking powder, rolled oats, shredded coconut, and chocolate chips.

Add the dry ingredients to the cooled wet mixture and mix until fully combined.

Step 4

Pour the batter into the prepared baking dish and spread into an even layer.

Bake for 25–30 minutes, until the edges are golden brown and a toothpick inserted comes out clean.
