Lime Frosted Oat Bars with Coconut (Vegan)

Make 1 - 8x8 Pan, 16 squares

Oat Blondie Base

½ cup (113 g) unsalted vegan butter

¾ cup (120g) light brown sugar

⅔ cup (165g) unsweetened applesauce

1 tablespoon (7g) ground flax seeds

1 cup (134g) all purpose flour

⅔ cup (68g) oat flour

½ teaspoon baking powder

1 teaspoon salt

½ cup (24g) unsweetened shredded coconut

¼ cup (32g) rolled oats

½ cup (90g) Enjoy Life vegan white chocolate chips

Lime Frosting

1 stick (113g) unsalted vegan butter, at room temperature

2 cups + 2 tablespoons powdered sugar

Zest and juice of 1 lime

Preheat the oven to 350F and line an 8x8 baking dish with parchment paper.

In a microwave proof bowl, add the butter and sugar and melt in 30 second increments, stirring at each interval, until the sugar is melted and the mixture is smooth. Add in the applesauce and flax meal. Mix well and set aside to let cool.

Meanwhile, combine the flours, salt, baking powder, oats, coconut, and chocolate chips. Add the dry blend into the cooled wet mixture, mix until well combined.

Pour into the baking dish and spread into an even layer. Bake for 25 - 30 minutes until the edges are golden brown and a toothpick comes out clean. Let cool completely.

Whisk together all of the frosting ingredients until smooth. Spread over the cooled oat base, cut into squares and serve. Store refrigerated in an airtight container.
