Roasted Cauliflower, Harissa & Halloumi Grilled Cheese
Serves 4
Time: 20 minutes
8 ounces halloumi cheese, sliced into ½ in pieces
⅓ cup mayo
2 tablespoons harissa pasta
3 tablespoons olive oil
½ lemon, juiced
2 cups cauliflower florets, broken into bite size pieces (approximately 1 small cauliflower)
2 cups arugula
1 sweet onion, thinly sliced
1 loaf seedy whole grain bread, sliced
Butter
Olive oil
Salt
Preheat the oven to 500F. Toss cauliflower with a drizzle of olive oil and salt. Roast for 5 minutes, stir, then roast another 5 minutes until fork tender and browned in some spots.
Combine mayo, harissa, paste, 3 tablespoons of olive oil, and lemon juice.
In a nonstick or cast iron skillet, heat over medium-high and add olive oil. Sear the cheese on both sides until deeply golden brown and the cheese is just soft in the middle.
Butter bread on one side and toast.
Assemble the sandwich with toasted bread, harissa mayo, arugula, sliced onion, grilled cheese, and roasted cauliflower. Enjoy, cause I know ya will!
