Salted Tahini No Bake Millionaire Bars

Makes 15 bars

Time 1 hour 30 minutes

Crust

150g (2 cups) animal crackers

12g (1 tablespoon) water

22g (1 tablespoon) maple syrup

79g (⅓ cup) vegan salted butter, melted (we recommend Miyoko cultured butter)

Tahini Caramel

168g (⅔ cup) tahini

258g (⅔ cup) maple syrup

146g (⅔ cup) vegan salted butter, melted


Ganache

125g (¾ cup) dairy free dark chocolate, 60% or higher

15g (1 tablespoon) vegan salted butter

15 animal crackers

Maldon salt

Crust

In a food processor, add animal crackers and process into a fine, sand-like crumb. Add in water, maple syrup, and melted butter. Process until the mixture becomes like wet sand and holds together when squished in your palm.

Line an 11x7* baking dish with parchment. Add the crust and press firmly until the bottom is evenly covered. Place in the freezer for 15 minutes to set. 


Tahini Caramel

In a microwave safe bowl, add butter and melt. Add tahini and maple syrup. Whisk until well combined and mixture thickens slightly. Pour over the crust and spread into an even layer. Place in the freezer for 30 minutes to set. 


Ganache

In a microwave safe bowl, add chocolate and butter. Melt in 30 second increments, stirring in between, until the mixture is melted and completely smooth. Pour over the caramel and spread into an even layer. Arrange the animal crackers over the chocolate and sprinkle the top with maldon salt. Place back in the refrigerator for 15 minutes to set the chocolate. 

Cut into bars and serve. Store refrigerated for up to a week. These are a great make ahead item!

*8x8 baking dish can be used but will result in thicker layers and fewer servings.
